Responsible for all culinary activities in the lodge and other facilities.
Skills required:
Responsible for the smooth running of the kitchen and managing areas of profit, stock, wastage control, hygiene practices and training within the kitchen.
Responsible for the planning and development of menus and the consistent production thereof to the highest possible standard.
Responsible for high quality presentation of food at all times in the restaurant, banqueting, picnic and braai venues.
Responsible for performance management and development of all staff in the department.
Must evaluate food products to ensure that company standards are consistently maintained and implement measures to manage food costs.
Must be up to date with OHSA legislation & requirements.
Must have the relevant Culinary qualifications.
Experience:
Must have a minimum of 5 years’ experience in a 4* lodge or hotel.
Must have worked up through the ranks from Commis Chef, CDP, Sous Chef to Executive Chef.
